This grilled cheese sandwich tastes like cheesecake. I’m not kidding. It’s made with white bread slathered with butter, a sweet and creamy layer of mascarpone cheese, apple pie filling, and caramel sundae sauce. I cannot get enough of this flavor combination!

Of course, this may not be the kind of lunch you’re indulging in every day, but it’s the perfect way to satisfy your midday sweet tooth. Moderation is key, after all!

This dessert grilled cheese sandwich is a little messy to eat, so you may want to grab a spoon or fork to scoop up all those deliciously sweet bites that fall on your plate.

Ingredients

  • Butter: I like to use salted butter for a little bit of flavor. Be sure to soften it first so it’s easily spreadable.
  • Bread: I recommend a standard white bread for this recipe.
  • Mascarpone Cheese: Adds a creamy, slightly tangy sweetness to the sandwich.
  • Apple Pie Filling: You can use store-bought apple pie filling to keep it quick and easy or use a recipe to make your own. Making your own? Check out my apple pie spice!
  • Caramel Sauce: If you’re trying to keep it quick, you can use store-bought caramel sauce. Otherwise, my homemade caramel sauce is a delicious option!

This caramel apple grilled cheese sandwich is delicious on its own as a sweet breakfast, lunch, or even dessert. However, it’s also great as part of a larger meal with a couple of sides! Here are a few ideas:

Recipe Tips and Tricks

  • Butter the outside of the sandwich. When you assemble the grilled cheese, be sure that the buttered side of the bread is facing out. The butter is what helps the bread get crispy and golden brown.
  • Preheat the skillet. It should be nice and hot before you add the grilled cheese so it starts toasting right away.
  • Serve right away. As with most grilled cheese sandwiches, this one is best served hot off the pan.

Variations and Substitutions

  • No mascarpone? You can swap it out for cream cheese instead, although it won’t be quite as sweet.
  • Use another type of bread. Honey wheat bread is also a delicious option.
  • Make it a little savory. Give it a smoky, salty twist with a sprinkle of cooked bacon bits.

Storage Instructions

Grilled cheese sandwiches are definitely best served right away while they’re still toasty and warm. However, if you do happen to have leftovers, you can store them in an airtight container in the fridge for up to 3 days.

To reheat, simply warm back in a skillet until heated through and re-crisped.

Can this be frozen?

Technically, yes, but I recommend doing so before cooking. Simply assemble the sandwiches, then wrap them tightly and store them in the freezer for up to 3 months.

When you’re ready to cook and serve them, let them thaw in the fridge first!

FAQs

What is the secret to the best grilled cheese? ›

Low and slow is the way to go.

Cook your sandwiches at medium-low heat. Try to speed up the process and you'll end up with a sandwich that's hot on the outside, but still cool and unmelted in the middle. It'll also be harder to get it to brown properly.

What to add to a grilled cheese to make it better? ›

Tuck in a little sautéed spinach, caramelized onions, chopped steamed broccoli, roasted red peppers, or roasted tomatoes. Add fruit. For really gourmet grilled cheese sandwiches, use a mix of Gruyere and brie cheese along with thinly sliced apples or a slather of fig jam. Pickles, please!

Why won't my caramel stick to my apples? ›

Apples have a waxy coating that will prevent the caramel from sticking, so it's important to wash and dry it off. Make sure the apples are cold, which helps prevent the caramel from slipping off.

Should you use butter or mayo for grilled cheese? ›

On the outside of a grilled cheese sandwich, mayonnaise is more convenient and yields a nicer texture. However, the taste is not ideal. We still prefer traditional butter, but, if there's no butter softened on your counter, do reach for the mayo. You'll be pretty happy with the results for sure.

What is the best melting cheese for grilled cheese? ›

Comté/Raclette/Gruyère

(Raclette actually comes from the French verb “racler” which means “to scrape.”) These are also the cheeses used for fondues and French onion soups, so it follows that they are also some of the best options for gooey grilled cheese sandwiches.

What 2 cheeses go well together for grilled cheese? ›

Sharp cheddar, Gouda, Fontina, Monterey Jack, Gruyere, Pepper Jack, and brie are all good options. The amount of cheese you use will depend on the size of your bread. You can do a mix of cheeses. I love sharp Cheddar, Monterey Jack, and Gouda together.

How to jazz up a grilled cheese? ›

Adding ingredients like chutney, pepper jelly, tomato jam, or bacon jam can totally change the flavor profile of your grilled cheese.

How to thin caramel for caramel apples? ›

Caramel is a deliciously sweet sauce that can turn up the volume on any dessert it's added to. But if you're hoping to drizzle caramel over vanilla ice cream or getting ready to dip apples for a fall celebration, you need a sauce that's not too thick. To thin caramel, just add some cream or water over heat.

Why is my caramel apple so hard? ›

You've got to cook it long enough to get a nice thick caramel covering and not have it sag off the apple. However you cook it too long and it won't go on smooth, or it will dry too hard to eat!

How do you get caramel to stick to the inside of apples? ›

Using a paper towel, wipe your apples down, removing the lemon juice as much as possible. If the inside of your apple is too wet, the caramel wont stick. Pour the caramel into the hollowed out apples until just below the top. Sprinkle with pecans.

What makes grilled cheese taste better? ›

So here are my two golden rules for my very best grilled cheese:
  1. Use TWO types of cheese – mozzarella for stretch and another for flavour (gruyere and vintage cheddar are my favourites)
  2. Give your sandwich press a miss. Use a pan on your stove! Just look at the superior golden buttery crust you get to bite into! ↓↓↓

How many slices of cheese for grilled cheese? ›

Spread 1 side of each bread slice with butter. Layer 4 slices bread, buttered-side down, with 3 slices cheese.

Should you butter both sides of a grilled cheese? ›

The perfect grilled cheese includes heavily buttered (not that fake, one molecule away from plastic stuff in a tub) bread on BOTH sides, first brown the one side, then flip one piece of bread and lay cheese on (you can use whatever you want, but I like Colby jack and muenster) it.

Should I toast my bread before making grilled cheese? ›

For the best results, toast your bread first. A quick toast will help your bread develop the golden edges and luscious crisp that you're after. It'll also help prevent the bread from getting soggy, no matter how many fillings you add.

Is it better to make grilled cheese with butter or oil? ›

Both can be used. However, I prefer butter as a better-tasting choice for grilled cheese. It adds a buttery flavor to the sandwich, and the milk solids are lightly brown to add a nutty taste and aroma.
